sunny makeshift sushi bowl with brown rice, glazed spicy tofu, chickpea 'tuna' with vegan kewpie mayo, cucumber, scallions, toasted sesame seeds & nori sheets

for the chickpea tuna I mashed a small can of chickpeas with a fork, added some finely chopped scallion ends, soy sauce, a sprinkle of msg & brown sugar, rice vinegar, some yogurt and vegan kewpie mayo. if you want you could also add some finely cut nori bits for a fishier taste
top off with toasted sesame seeds!

simple pleasures - homemade sourdough bread (white & whole wheat, 70% hydration), ricotta fresca with honey & the best bergkäse from the farmers' market, marinated olives, small 'schlangengurken' (snake/club gourd apparently, my absolute favorite because they really taste how cucumbers should always taste like), tomatoes

+ my precious ferments and vinegars (drinking vinegar, homemade vinegar, apple cider for making vinegar, sourdough starter & sourdough)
+ herb selection (I dry most of them! parsley, hyssop, coriander, chives with blossoms, mint)

I feel like I am making better sourdough now but somehow I still suck at shaping it properly and scoring it deep enough without leaving a mess (I blame it on my adhd)

and this time I also tried letting my finished loaf slowly cool down in the oven w the residual heat after baking (with the door cracked to vent) and it really helps keep the crust crusty for longer! the loaf is very rustic but tasted so so good, perfectly crunchy, aromatic crust, soft airy interior and nice tanginess

if you know me you'll know that I absolutely love roses/anything rose scented and my turkish second name 'Gül' translates to Rose! I swear by rose water and love natural cosmetics with rose oil so this lovely package by @hdlstudios was just right for me and for springtime

also, how cute are these pink @withinmood cold cups!!

lavender rose matcha recipe:

lavender rose syrup:
- 1 cup water (you can add a little food safe rose water as well!)
- 1 cup brown sugar
- a handful of dried organic lavender
- 1 tbsp dried rose buds
- a sprinkle of sea salt

mix all ingredients and boil them for about 20-25 minutes. strain and fill into clean bottles while still hot

matcha:
- 3g premium matcha, sifted
- 50ml cold oat milk or cold water
- 200ml oat milk
- 1-2 tsp homemade lavender rose syrup
- ice cubes
- dried rose buds

cold whisk the sifted matcha and oat milk/water until creamy. fill a tall cup with icecubes and add your syrup & oat milk (or any other plant milk), then pour the whisked matcha on top. serve with dried rose buds - enjoy!

@inaholub asked me to prepare food for the 1-year anniversary of her inclusive hair salon 'soft & cut' and I felt incredibly honored and happy to be part of it and to support such a space where marginalized people can feel free & happy about themselves. it made me very happy to see FLINTA* enjoy my food and celebrate

I served my classic plant based espresso chocolate & matcha miso caramel cookies, fresh sourdough bread, whipped red beet butter, vibrant spring produce from the farmers' market as crudites, my whipped feta dip, homemade pink pickles, marinated olives and lavender cardamom oat milk among other things

this was so warming for breakfast and I highly recommend you to eat miso soup in the morning. it's nothing fancy and doesn't need all the extras because it's already perfect - if you have wakame on hand, you can also add it (I ran out of it and made a kombu dashi instead)

I've been trying to make sides like this for days where I just want to lay in bed and eat comfort food to at least get some greens/protein/fiber in my diet and most of the things go so well together - like these peas with pasta

I love making tiramisu because it's actually pretty easy to make
for this one (not authentic ofc) I used spelt sponge fingers, agave syrup instead of sugar because it has a lower glycemic index (a lil more PCOS friendly), organic eggs & also added some quark for more protein

miso butter spelt pasta & balsamic glazed tofu top

miso butter spelt pasta & balsamic glazed tofu topped with coriander, black pepper and lots of grana padano

I used rice miso by @misomiso.lab and it was perfect (unpaid ad, gifted product)
I pat the tofu dry, mixed it with some neutral oil & salt and airfried it for ~20-25 minutes. Then I coated it with a mix of soy sauce, balsamic vinegar and garlic in a pan (heat up the glaze before adding the tofu). Miso butter pasta was pretty straightforward - cook pasta (al dente), save enough pasta water and toss with a good amount of butter and tangy miso paste (about 1 tbsp each, use 1/2 tbsp miso paste if your miso paste is very smooth)

I've been trying to manage my PCOS symptoms through my diet & working out and it's going surprisingly well - the only issue I have is that I don't have an appetite most days (I'm guessing it's because my blood sugar levels aren't spiking that much anymore because I eat more protein/less processed foods/less sweets and take my Inositol supplement religiously) - it's becoming an issue though because I used to eat based on intense cravings and now that I don't know what to crave sometimes, I find it hard to cook or eat

some of you inspired me to make miso butter pasta and I just went with it and it was PERFECT

I usually prefer regular pancakes but it was fun to play around with these! to be completely honest I am not fully happy with how I plated them and contemplated if I should even post it but I'm trying to talk myself out of my perfectionism

I've been making pancakes regularly for the longest time because they portray such a warm, cozy feeling and making them is a lot of fun, especially for loved ones. The first stack is from a while back where I wanted to make pink pancakes to celebrate the fact that I had reached 1000 followers I believe and it reminds me of how thankful I am of every single one of you supporting me consistently, even if I often fail to make all the recipes I promise

inspired by @kristys_kitchen__ and her beautiful pancake stack! I blitzed the oats (about 40-50g) up to a fine powder and mixed it with 1 egg, ~150-200g greek yogurt, vanilla and a little maple syrup and used coconut oil in the pan to fry them - it tasted great but felt a bit too grainy for me because of the oats, I might try them with spelt flour next time

even though I am trying to make better food choices bc of my PCOS, I am still a 'foodie' that loves indulgent food and I love my sunday pancakes so this feels like a decent alternative
